| Shrimp with Lemon and Bowtie Pasta Recipe Ingredients
2 | tablespoons extra virgin olive oil, cold pressed | 1 | lb of broccoli, cut into small florets | 1/2 | cup white wine | 1 | tablespoon lemon zest | 1/8 | teaspoon crushed red pepper flakes | 3 | tablespoons fresh lemon juice | 12 | ounces frozen baby peas | 1/2 | teaspoon freshly ground pepper | 1 | pound shrimp, cooked large, peeled and deveined | 3 | tablespoons grated Parmesan cheese | 8 | ounces cooked bowtie pasta | 1 | thyme, 1 sprig of fresh | Directions
Cook pasta, toss with 1 Tablespoon olive oil, and set aside.
Coat a large skillet with cooking spray, add 1 Tablespoon olive oil and heat over medium heat. Add broccoli (or asparagus), white wine, red pepper flakes, pepper, and lemon zest. Saute for 4-5 minutes, or until broccoli is bright green. Add the peas, and cook for 3 more minutes. Add shrimp, stirring for another 2-3 minutes, or until the shrimp are thoroughly heated. Add lemon juice and the sprig of thyme.
Sprinkle warm pasta with 2 Tablespoons Parmesan cheese. Remove sprig from shrimp mixture; add shrimp and vegetables to the pasta. Toss, and sprinkle with remaining 1 Tablespoon cheese.
